Dragon Fruit Lesson

Yum! Picked up one of these for about $8/lb just to try it out. It’s been about 5 years since I’ve had dragon fruit when I was in Taiwan. Apparently the official name of this fruit is “pitaya” according to Wikipedia (wiki pitaya) — and diabetics in Taiwan eat it as a rice substitute!
